Master pastry cook Takashi Nakai is an owner of a not very big family confectioners shop in Yoshino city Nara prefecture. This region of Japan is far famous by their traditional producing of high quality starch which is made of a regional plant maranta –Kuzu. Original, pure starch Yoshinohon Kuzu is considered to be the best in Japan and it is used to produce traditional tea sweets –Kuzu Kashi and a hot jelly drink Kuzu-yu. The drink at all times was considered as the best sweater to warm the body in winter and a good nutritious food for squeamish stomach. A flickering respect to the native raw materials and a big love to their business is a good basis for creating natural, healthy and tasty Japanese confectionery masterpieces from master Yoshinohon Kuzu –Takashi Nakai.
